2-Ingredient Banana Coconut Cookies


These 2-Ingredient Banana Coconut Cookies are the ultimate simple treat. They contain no gluten, grains, dairy, eggs, nuts or added sugar, and are so quick and easy to make (requiring only a bowl, a spoon, and a baking pan). 

I saw some two ingredient cookies on Instagram, then on Tumblr. I didn’t see THESE two ingredient cookies, let’s be clear, I saw banana and oatmeal cookies.

That banana and oatmeal version, which inspired my banana coconut cookies, seems to be common on vegan food blogs but I thought, when I saw them, that coconut would work just as well. I was right!

So here they are. Cookies made with truly just two ingredients (of course, you may add other things if you prefer)!

These are the perfect thing when you a cookie, but don’t want the complication of mixing flour, butter, eggs, baking soda, and more. Plus, these 2 Ingredient Banana Coconut Cookies have the fact going for them that banana and coconut is an A+ flavor combination. Just throw the two ingredients together and let the magic of the oven do its work.

P.S. These are kid-tested, and kid-approved. My niece and nephew (aged 3 and 5, respectively) enjoy these every time they visit my parents, since my mother makes these for my father regularly! Although I suspect they think they’re eating a biscuit. The key is not to call them “cookies” in front of any child that eats Toll House, etc. on the regular, because they’ll be disappointed. But a sweet, healthy, keep-the-munchies-at-bay snack? This recipe delivers.

2-Ingredient Banana Coconut Cookies

  • 1 banana
  • 3/4 cup unsweetened shredded coconut


  1. Preheat the oven to 350° F. Grease a baking pan, set aside.
  2. Pulse the two ingredients for a few moments in a food processor until very well combined.
  3. Shape into discs, then set on the greased cookie sheet and bake in the preheated oven for 25 minutes or until golden.


Optional mix-ins include: chocolate chips, chopped bacon, chopped nuts, dried fruit, cinnamon. Be sure and do not incorporate more than a small handful of mix-ins into each batch, or the cookies will not hold together.


These tasty 2-Ingredient Banana Coconut Cookies are simplicity itself, not to mention gluten-free, grain-free, and nut-free.
